Weigh. 2.Add Sugar by weight (given in recipe) 3. Add Lemon Juice by weight (given in the recipe) 4. Take herbs (lemon verbena) and place them into the Cheese cloth. Tie to copper pot. 5)Pour Liquid into Jam Pot. 6) Turn on high heat. Follow recipe directions, stirring and skimming when needed until Jam is set.
