ABOVE: This is a Jersey dairy cow. The Jersey's have lower milk production but their milk is higher in protein and butter fat. Their milk is very good for cheese production. Hardesty has both Holstein and Jersey dairy cows on his farm. Les Hardesty is owner of Painted Prairie Farm in Greeley which is a dairy farm home to 750 head of dairy cows. All of his milk is contracted to the Dairy Farmers of America which is then sold to Leprino for making their mozerrella cheese. Leprino will be opening a cheese plant in Greeley in Fall of 2011 which will be beneficial for dairy farmers like Hardesty because the milk doesn't have to be trucked as far as well as a great opportunity to grow the dairy industry in the state.
